Here's a cake that will forever taste like my childhood. My mom used to, not only make it for our family to enjoy, but also to sell at the local farmer's market on the weekends. While I tried to stay true to her original recipe I couldn't help but add a touch of cardamom to the apples for a new twist on our family classic. OK mom suggested the cardamom, even though I would love to steal the credit here!
Time: 2 hours
3 cups flour, plus extra for dusting
3 teaspoons of baking powder
1/2 teaspoon of salt
2 1/2 cups of sugar
1 cup of vegetable or canola oil
1/3 cup orange juice
2 1/2 teaspoons of vanilla extract
3 tablespoons of brown sugar
2 teaspoons of cinnamon
1/2 teaspoon of cardamom

Preheat oven to 350 degrees.
Generously grease pan and dust with flour. Make sure the flour coats all the surfaces including the center! Tap out any access flour.
Peel and slice apples thin, add to a bowl along with brown sugar, cinnamon, and cardamom. Use your hands to evenly cover apple slices.
In a large bowl whisk together dry ingredients and set aside.
In a separate bowl crack in eggs and add sugar. Whisk until just combined. Add in oil, orange juice, and vanilla, stir to combine.
Pour dry ingredient mixture into wet mixture. Using a spatula fold in flour mixture until combined and smooth. Batter should be thick.
Now for layering the cake. Take about a 3rd of the batter and spoon into the pan. Spread the batter so its a even layer, batter is thick so you may need to use your fingers to pack it down. Place apple slices on top. Repeat same steps with another 3rd of the batter and apples. Repeat again- the apples will make up the top layer of the cake.
8. When the cake is arranged, place in the oven and bake for approximately 90-95 minutes.
Cake is done when toothpick inserted comes out clean.
9.When the cake is done let it rest for at least 10 minutes before trying to turn onto plate. 10.This will ensure it doesn't stick. Slice and enjoy!
Note: Store in a airtight container for up to 4 days.
