Classic Guacamole

Let's talk about guacamole (sigh)...I find its much like its loud cousin salsa: there's never enough of it and before you know it you're scraping the bottom of the bowl asking for more? Am I right? I digress, let's get down to the nitty gritty.

This is a classic simple take on guacamole, I won't dare to claim it's authentic but I would say its pretty darn close.

Serves 4

4 ripe avocados

1/2 red or white onion

1 jalapeno

4-6 cherry tomatoes

handful of fresh cilantro

1-2 limes

4 tablespoons of olive oil

cumin powder

garlic powder

salt & pepper

  • Note: Some ingredients are measured not specifically for the purpose of taste. Start with less lime juice have a taste and see if you prefer more. Add the spices a little bit at a time and check the flavor. Remember its always easy to start with less and add more.

Peel and mash avocados in a serving bowl. Dice up fine- onion, jalapeño, and tomatoes and add to avocado. Chop up as much cilantro as desired. Squeeze in lime juice. Add olive oil and spices. Mix to combine, taste test, enjoy, and serve!

Serving Suggestion: I sometimes drizzle hot sauce over mine like Cholula for added spice!
