If you've never had a shishito pepper your life starts now my friend! I would describe them as Jalapeños chiller cousin. Hails from the same pepper family but this ones a little different on the flavor, shape, and color scale. While they can be consumed raw they are usually prepared blistered or roasted for that is when the real flavor magic happens. I came up with one of the easiest appetizers or snacks you can throw together in less than 15 minutes with only 4 ingredients.
P.S. They are wrapped in bacon... can you every really go wrong wrapping anything in bacon?
Time: 15 minutes
Makes 12 peppers
12 raw shishito peppers
6 slices of bacon
1/4 cup of sweet chili sauce ( I used Trader Joe's brand)
1/4 cup of olive oil
Preheat oven to 400 degrees.
Line a baking tray with tin foil or parchment paper.
Take bacon slices and cut in half. Wrap bacon around shishito pepper, allow bacon to slightly overlap so it secures into place.
In a bowl mix together chili sauce and oil. Gently submerge bacon wrapped shishitos in mixture to coat them before placing them on prepared baking tray. Sprinkle with black pepper if desired.
Place prepared shishitos bacon seam side down so they won't unravel during the cooking process.
5. Bake for 10-12 minutes until bacon has crisped up. Serve and enjoy.
